A ZESTY TOMATO-BASIL SALAD:
So good you'll want to eat it for breakfast!


  • Cut up loaf of bread into one-inch cubes and allow to dry out

  • Chop 4-6 fresh tomatoes coarsely

  • Shred one-half cup of fresh basil leaves

  • Press one head of garlic

  • Squeeze juice from two lemons

  • one-quarter cup balsamic vinegar

  • one-half cup virgin olive oil

  • green onions, fennel, cucumbers, coarse black pepper (lots)

Mix all these ingredients and let stand in refridgerator for several hours before serving. It's so good, you won't want to share it.
